Print to a pdf file, going to a known location, acting as a default printer.

Download and install this software:
https://bitbucket.org/codepoet/cups-pdf-for-mac-os-x/downloads/CUPS-PDF%202.5.0%20Installer.zip
Create a printer, selecting the cups pdf printer.
This works very well.
